We collect the fruits for our preserves at the peak of their ripeness and preserve them a few hours later, thus preserving their nutritional content for up to two years! (In contrast, fresh fruits are often harvested long before their nutritional content reaches its maximum and spend from 7 to 14 days reaching the retail market and subsequently being consumed).
Regarding the addition of preservatives, the combination of thermal processing and a low pH (relatively acidic environment) creates a safe and stable product for an extended period, making the use of any preservatives unnecessary.

Cleaning and cutting the fruits into small pieces constitute the first stage of a careful yet quality process.
Fresh fruits, combined with the right sugar ratio, and the proper boiling in open pots, bring out the rich aroma, intense color, and the authentic characteristic flavor of the jam. Small quantities ensure better control of the production process.
